Base Ingredients

  • 6 cups rice Chex cereal
  • 12 oz white chocolate chips (or melting wafers)
  • 1 cup freeze-dried strawberries
  • 1 cup powdered sugar

Instructions

  1. Add Cereal: Place 6 cups of rice Chex cereal into a large mixing bowl, setting the base for your strawberry Chex mix.
  2. Process Strawberries: Use a food processor to finely grind 1 cup of freeze-dried strawberries into a powder. Note that tiny seeds may remain; alternatively, crush in a plastic bag using a heavy spoon if preferred.
  3. Melt White Chocolate: Melt 12 oz of white chocolate chips or melting wafers in a microwave-safe bowl by heating in 20-second increments, stirring after each. When mostly melted, stir continuously to finish melting without overheating to prevent seizing.
  4. Flavor White Chocolate: Stir 2 tablespoons of the strawberry powder into the melted white chocolate until fully combined, creating a strawberry-flavored coating.
  5. Coat Cereal: Pour the strawberry white chocolate mixture over the Chex cereal and gently stir to evenly coat all the pieces without breaking them.
  6. Coat with Powdered Sugar: Place 1 cup powdered sugar and the remaining strawberry powder into a large resealable plastic bag. Transfer the chocolate-coated Chex mix into the bag, seal it, and shake well until all the cereal pieces are evenly dusted with the powdered sugar mixture.
  7. Cool and Add Toppings: Spread the coated Chex mix onto a parchment-lined cookie sheet or back into a large bowl to cool completely. Once cooled, gently fold in ⅔ cup red or pink/Valentine’s M&Ms, 2 tablespoons of red, pink, and white sprinkles, and any optional add-ins you desire. Serve and enjoy!
