Description

This delicious Taco Lasagna layers seasoned ground beef, black beans, corn, salsa, and cheese between soft flour tortillas for a flavorful, easy-to-make Mexican-inspired casserole. Baked to perfection with melted cheese on top, it’s a crowd-pleaser perfect for family dinners or casual gatherings.

Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn, thawed

Seasonings and Sauces

  • 1 packet taco seasoning
  • 1/2 cup water
  • 2 cups salsa (your preferred heat level)

Other Ingredients

  • 6 flour tortillas (8-inch size)
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup sour cream (optional, for serving)
  • Fresh cilantro or green onions, chopped (optional, for garnish)

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Ground Beef and Onion: In a large skillet over medium heat, cook 1 lb of ground beef and the chopped onion until the beef is browned and the onions are softened. Drain any excess fat from the skillet.
  3. Add Seasoning: Stir in 1 packet of taco seasoning and 1/2 cup water into the skillet mixture. Simmer for 2-3 minutes, allowing the sauce to thicken slightly.
  4. Add Beans, Corn, and Salsa: Mix in the rinsed black beans, thawed corn, and 1 cup of your preferred salsa. Cook for another 2 minutes, then remove the skillet from heat.
  5. Layer the Lasagna: Place 2 tortillas at the bottom of the baking dish—cut them as needed to fit. Spread one-third of the meat mixture evenly over the tortillas, then sprinkle with one-third of the shredded cheese.
  6. Repeat Layers: Repeat the layering process two more times with tortillas, meat mixture, and cheese, forming three layers in total.
  7. Bake Covered: Cover the dish with foil and bake in the preheated oven for 20 minutes to heat through and meld flavors.
  8. Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes until the cheese on top is melted and bubbly.
  9. Rest and Serve: Allow the taco lasagna to rest for 5-10 minutes before slicing. Serve with optional sour cream and garnish with chopped cilantro or green onions if desired.

Notes

  • For a spicier dish, choose a hotter salsa or add chopped jalapeños to the meat mixture.
  • Use corn tortillas for a gluten-free option, but reduce layering number or adjust baking time accordingly.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Sour cream and fresh herbs add a nice creamy and fresh contrast to the baked layers, but they are optional.
  • Feel free to add extra vegetables like diced bell peppers or chopped tomatoes for more texture and flavor.
