Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook Ground Beef and Onion: In a large skillet over medium heat, cook 1 lb of ground beef and the chopped onion until the beef is browned and the onions are softened. Drain any excess fat from the skillet.
- Add Seasoning: Stir in 1 packet of taco seasoning and 1/2 cup water into the skillet mixture. Simmer for 2-3 minutes, allowing the sauce to thicken slightly.
- Add Beans, Corn, and Salsa: Mix in the rinsed black beans, thawed corn, and 1 cup of your preferred salsa. Cook for another 2 minutes, then remove the skillet from heat.
- Layer the Lasagna: Place 2 tortillas at the bottom of the baking dish—cut them as needed to fit. Spread one-third of the meat mixture evenly over the tortillas, then sprinkle with one-third of the shredded cheese.
- Repeat Layers: Repeat the layering process two more times with tortillas, meat mixture, and cheese, forming three layers in total.
- Bake Covered: Cover the dish with foil and bake in the preheated oven for 20 minutes to heat through and meld flavors.
- Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes until the cheese on top is melted and bubbly.
- Rest and Serve: Allow the taco lasagna to rest for 5-10 minutes before slicing. Serve with optional sour cream and garnish with chopped cilantro or green onions if desired.
