Description

A vibrant and flavorful Teriyaki Chicken Crispy Rice Salad that combines crispy golden jasmine rice with tender glazed chicken, fresh crunchy vegetables, and a savory teriyaki sauce. This recipe offers a delightful mix of textures and tastes, perfect for a quick and satisfying meal in just 35 minutes.

Ingredients

Scale

Rice and Chicken

  • 2 cups cooked jasmine rice (chilled)
  • 2 tablespoons vegetable oil
  • 2 boneless, skinless chicken breasts, diced
  • Salt and pepper, to taste
  • 1/2 cup teriyaki sauce (plus extra for drizzling)

Salad Vegetables and Garnishes

  • 1 cup shredded romaine lettuce
  • 1/2 cup shredded purple cabbage
  • 1/2 cup shredded carrots
  • 1/2 cucumber, thinly sliced
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds
  • Fresh cilantro leaves, for garnish (optional)

Instructions

  1. Crisp the Rice: Heat 1 tablespoon of vegetable oil in a large nonstick skillet over medium-high heat. Spread the chilled jasmine rice evenly in the pan and cook undisturbed for 5 to 7 minutes until the bottom is crispy and golden brown. Carefully flip the rice to crisp the other side lightly. Remove the crispy rice from the pan and set aside.
  2. Cook the Chicken: In the same skillet, add the remaining tablespoon of oil. Season the diced chicken breasts with salt and pepper. Cook the chicken pieces for about 5 to 7 minutes until they are golden brown and fully cooked through.
  3. Glaze the Chicken: Pour the 1/2 cup of teriyaki sauce into the skillet with the cooked chicken. Stir and cook for another 1 to 2 minutes, allowing the sauce to thicken and glaze the chicken, making it sticky and flavorful. Then remove the skillet from heat.
  4. Assemble the Salad: On a large serving bowl or platter, arrange a layer of the crispy rice. Top the rice evenly with shredded romaine lettuce, purple cabbage, shredded carrots, thinly sliced cucumber, and green onions.
  5. Add Teriyaki Chicken: Spoon the glazed teriyaki chicken evenly over the layered salad. Drizzle extra teriyaki sauce over the entire dish to enhance the flavor.
  6. Finish with Garnish: Sprinkle sesame seeds on top and garnish with fresh cilantro leaves if desired to add a fresh and nutty finish.
  7. Serve: Serve the Teriyaki Chicken Crispy Rice Salad immediately while the chicken is warm and the rice crispy. Enjoy this satisfying and colorful salad!

Notes

  • Using chilled rice helps achieve a crispier texture when frying.
  • For vegetarian version, substitute chicken with tofu or tempeh and use a vegan teriyaki sauce.
  • Adjust the amount of teriyaki sauce based on your preferred level of sweetness and saltiness.
  • Use a nonstick skillet to prevent the rice from sticking during cooking.
  • Garnish with cilantro is optional but adds a fresh herbal note.
