Instructions

  2. Add Curry Paste: Stir in the red Thai curry paste and cook for another 1–2 minutes, allowing the spices to bloom and infuse the oil.
  3. Simmer Broth: Pour in the chicken or vegetable broth and bring the mixture to a gentle simmer to meld the curry flavors with the stock.
  4. Add Coconut Milk and Seasonings: Stir in the coconut milk, soy sauce, brown sugar, and lime juice until the mixture is well combined and creamy.
  5. Cook Mushrooms: Add the sliced mushrooms to the pot and simmer for 5 minutes until they become tender and flavorful.
  6. Cook Dumplings: Gently add the frozen or fresh dumplings to the soup. Cook according to the package instructions, usually 5–7 minutes for frozen dumplings, until heated through and fully cooked.
