  • 1 avocado, sliced

  • 1/2 cup fresh cilantro leaves
  • 1/2 cup cooked rice noodles (optional)

Peanut Dipping Sauce

  • 1/4 cup creamy peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1–2 teaspoons maple syrup or honey
  • 2–3 tablespoons warm water (to thin)


Instructions

  1. Prepare Ingredients: Wash, peel, and slice all vegetables as described, and arrange them neatly in an assembly line. Have the fresh herbs and cooked noodles ready on the side to streamline the rolling process.
  2. Soak Rice Paper Wrapper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10–15 seconds until soft and pliable. Lay it flat on a clean, damp towel or surface.
  3. Fill and Roll: Arrange a small amount of each filling ingredient—shredded carrots, cabbage, cucumber, sliced bell pepper, avocado slices, fresh mint and cilantro leaves, and rice noodles if using—in the center of the softened rice paper. Fold in the sides of the wrapper carefully and then roll tightly from the bottom up to enclose the filling securely, forming a spring roll.
